6 Ounces Bacon, Chopped
1 Pound Italian Sausage
10 Garlic Cloves
1 Medium Onion, Finely Chopped
4 Cups Chicken Broth
6 Cups Water
5 Medium Potatoes, Peeled & Cut to 1/4 “
1 Bundle Kale Chopped
1 Cup Whipping Cream
Salt & Pepper to Taste
Parmesan Cheese to serve
In large pot add chopped bacon and sauté until browned. Remove bacon to a paper-towel lined plate and spoon out excess oil, leaving about 1 tablespoon in the pot.
Add Italian sausage and break it up while sautéing until cooked through. Remove to paper-towel lined plate.
Add chopped onion to the pot and sauté until soft and golden and then add minced garlic and sauté one minute.
Add chicken broth and water and bring to a boil. Add potato pieces and cook until tender. When potatoes are nearly done add kale, sausage and bring to a light boil.
Stir in cream and bring to a boil. Season to taste with salt and pepper and then remove from heat. Garnish with bacon and parmesan.
