Crust:
1 1/2 cups Flour
1/3 Cup Sugar
1/4 Tsp. Salt
1 Tbsp. Lime Zest
1/2 Cup Butter, chilled and cut into small pieces
Filling:
4 Eggs
1 1/3 Cups Sugar
1/2 Cup Sour Cream
1/2 Cup Lime Juice
Preheat oven to 350°. Have a 9″ X 13″ baking pan ready.
Crust:
In food processor combine flour, sugar and salt. Add butter chunks a few at a time and pulse, Continue until all butter is blended with flour mixture. The mixture resembles fine sand. Pour mixture into baking pan and press down firmly into an even layer. Bake 19-23 minutes, until lightly browned around the edges.Take the crust out of the oven.
Filling:
Mix together all filling ingredients until smooth. When crust is ready, pour filling over crust. Bake about 16 minutes, or until filling is set and does not jiggle when the pan is gently shaken. Cool to room temperature, then refrigerate for at least 3 hours, or overnight before slicing . Top slices with powdered sugar.
