Whisk the warm water, yeast and sugar together in a mixer bowl. Cover and allow to rest for five minutes

Add the olive oil, salt and flour. Beat with dough hoook for 2 minutes. Knead in the mixer for another 5 minutes. Dough is ready when you poke it with your finger and it slowly bounces back.

Lightly grease a large bowl with oil and place the dough in the bowl and turn it so the top gets oiled. Cover the dough with waxed paper and cotton tea towel. Allow it to rise until doubled, about 60 minutes. Let dough rest before rolling it out for pizza.
