3 1/2 Cups Chokecherry Juice

1/2 Cup Lemon Juice

1 Tbsp. Butter

1 1.75 Oz. Package of Pectin

4 1/2 Cups Sugar

3 Cups Juice

6 1/2 Cups Sugar

2 Pouches Liquid Pectin

Juice: Wash chokecherries in cool running water. Place in stainless steel or enamel kettle. Cover with water and bring to a boil. Simmer, covered, for 15 minutes or until soft. Cool and strain through cheesecloth to produce juice. Do NOT crush seeds

Jelly: Put Juice into sauce pan along with lemon Juice and bring to boil. When boiling, sprinkle pectin into juice and add 1 Tablespoon butter. When boiling add sugar and boil for two minutes. Remove from heat and skim off foam. Fill approximately 6 1/2 pint sterilized jelly jars. Put in a water bath and boil for 20 minutes in high altitudes.

Alternate Directions for Liquid Pectin

Boil juice and sugar hard for 1 minute. Add liquid pectin and boil for 5 minutes. Remove from heat and skim off foam. Fill approximately 6 1/2 pint sterilized jelly jars. Put in a water bath and boil for 20 minutes in high altitudes. foam and
