3/4 Cup Melted Butter

1/3 Cup Brown Sugar

1/3 Cup Sugar

1/3 Cup Molasses

1 1/2 Tbsp Grated Fresh Ginger

1 Egg

1 Tsp. Vanilla

1 1/2 Cups Flour

1/2 Cup Cocoa

1 Tsp. Baking Soda

1 Tsp. Cinnamon

1 Tsp. Ground Ginger

1/2 Tsp. Sea Salt

! Cup Chocolate Chips and/or Chopped Nuts

Preheat oven to 350° F. Grease two cookie sheets.

Blend butter, sugars and molasses in a large bowl. Add fresh ginger, egg and vanilla. Sift the dry ingredients into the bowl and stir until combined (dough will be soft). Stir in chocolate chips and/or nuts. Chill dough for at least 2 hours or overnight.

Shape 1 Tbsp. of dough into balls. Roll the balls in granulated sugar to coat. Place on baking sheet 2 inches apart. Bake 10 minutes until the cookies crinkle and the edges feel set. Cool cookies on baking sheet for 10 minutes before removing.
