Preheat oven to 350°. Grease four 7 X 3 inch loaf pans. I use 4 small loaf pans and one large. Mix 1/4 cup sugar and 1 teaspoon cinnamon in small bowl. Dust greased pans lightly with sugar mixture.
Cream 3 cups sugar and shortening. Add eggs, mashed bananas, sour cream, 2 teaspoons cinnamon, and vanilla and continue mixing until blended. Add the rest of the ingredients and mix until just combined. Stir in walnuts and divide batter evenly into prepared pans. Bake for one hour and test with cake tester.
