Crust |
1/2 Cup Butter Softened |
1 Cup Sifted Flour |
1/2 Cup Powdered Sugar Sifted |
Filling |
1 Cup Sugar |
2 Tbsp. Flour |
1/2 Tsp. Baking Powder |
2 Beaten Eggs |
1 Grated Lemon Rind |
2 Tbsp. Lemon Juice |
Frosting |
1 Cup Powdered Sugar |
1 Tbsp. Melted Butter |
Hot Lemon Juice |
Mix crust ingredients and pat crust into 8 X 8 inch pan. Bake at 350° for 15 minutes.
For the filling sift dry ingredients, mix the rest of the ingredients and add to dry. Stir and spread on crust. Bake at 350° for 25 minutes or until light brown.
Combine all frosting ingredients with enough lemon juice to make frosting spread. Frost baked filling and let set.
